Since pumpkins seem to have become a symbol of Samhaintide, it seems natural that they should also become a major part of the Sabbat feast. Two of the most popular ways of serving pumpkin are as a pie or as bread. Here is one recipe for pumpkin bread:

Samhain Pumpkin Bread:

Ingredients

2 cups pumpkin (cooked or canned)
1 cup of corn oil
3/4 cup water
4 eggs (beaten)
3 2/3 cups of unbleached flour
1 1/2 teaspoons salt
1 teaspoon nutmeg
2 teaspoons cinnamon
2 teaspoons baking soda
2 1/4 cups of sugar
1 cup white raisins
1 cup walnuts (chopped)

Preparation

Mix corn oil, eggs, water and pumpkin until smooth. Add flour, salt, nutmeg, cinnamon, baking soda, and sugar. Then combine to this mixture raisins and nuts. Bake for about one hour at 350° in loaf pans that have been greased and floured.

Pumpkin bread is wonderful served with cream cheese and can be decorated with little pumpkin-shaped candies. In fact, recently for our Halloween festivities, I baked a sheet cake (it may have been banana bread or spice cake, or possibly pumpkin bread, I don't remember) and iced it with a cream cheese icing. Then I dotted it with candy pumpkins and went over the whole cake with green icing to form pumpkin vines with lots of spiral tendrils and green leaves. It really was lovely.
